Enchiladas Kay Hicks style
1 can Enchilada sauce
(sometimes I do homemade)
Hard or soft taco shells
1 lb ground beef
Chopped onion
Cheese
Toppings: shredded lettuce,
pico de gallo, sour cream, salsa, etc.
Brown ground beef with
chopped onion. Dip each shell in Enchilada sauce. Fill with ground beef and
sprinkle with cheese. Bake in the oven at 350 just until shells are desired
done-ness (15-20 minutes). Top with favorite Mex food toppings.
