Cheesy Taco Pasta (Dinner Then Dessert)

Cheesy Taco Pasta (Dinner Then Dessert) ½ pound shells pasta 1 pound ground beef 1 packet taco seasoning (or homemade) ¾ c water 1 c salsa 1 c shredded cheddar (optional) Cook the pasta. Brown the ground beef, and drain the fat. Then, add the taco seasoning and ¾ c water. Stir, and cook until the water is gone. Combine pasta, beef, salsa, and cheese (if using). Stir to combine.

Chili Mac (MSPI Mama)

Chili Mac (MSPI Mama) ½ lb lean ground beef or turkey ½ c chopped onion 1 clove garlic, minced 1 T canola or olive oil 8 oz elbow macaroni 16 oz can kidney or pinto beans, undrained 1 c. frozen corn 16 oz tomato sauce 1 c water 1 T chili powder ½ t salt In a large skillet coated with oil, brown the meat, onion, and garlic. Drain off any extra fat and return pan to the burner. Add remaining ingredients. Bring to a boil, stirring often. Once boiling, turn heat down, cover, and simmer for 20 minutes. Stir occasionally. Add additional water if necessary, until macaroni is properly cooked. Adjust seasonings to taste.

One Pan Cheesy Smoked Sausage and Pasta

One Pan Cheesy Smoked Sausage and Pasta 1 T olive oil 1 pound beef smoked sausage (links, sliced) ½ c. diced onion 1 T minced garlic ¼ t Red Pepper Flakes ½ t salt and pepper, each 2 c chicken broth 1 (14 oz) can diced tomatoes ½ c. milk 8 oz dry penne pasta 2 c shredded Colby-Jack cheese 1/3 cup chopped scallions, for garnish In a large pan (soup pot), add olive oil and heat over medium heat. Add onions and sausage. Cook for 5 minutes. Add garlic and all seasonings. Cook for 2 minutes. Add chicken broth, tomatoes (drained), milk, and pasta. Bring to a boil, lower heat, and cover for 15 minutes. Stir in cheese. Garnish with chopped scallions. (Also good with fresh or frozen spinach or kale. Frozen – add before boiling. Fresh – add just at the end to wilt it in)

One Pot Chili Pasta (BudgetBytes)

One Pot Chili Pasta (BudgetBytes) 1 T. olive oil 1 medium onion 2 cloves garlic 1 lb ground beef 2 T. flour 2 T. chili powder 1 (15 oz) can tomato sauce 1 (15 oz) can diced tomatoes 1 (15 oz) can black beans 1 c. frozen corn kernels 2 c. uncooked elbow macaroni 2 c. beef broth 1 c. shredded cheese Dice the onion and mince the garlic. Cook both in a large pot with olive oil over medium heat for 1-2 minutes, or until soft and transparent. Add the ground beef and continue to stir and cook until it is fully browned. Drain after browned. Add the flour and chili powder to the pot and stir to coat the meat. Continue to stir and cook for 1-2 minutes more. Drain and rinse the beans. Add the beans, tomato sauce, diced tomatoes, and corn kernels. Stir well. Add the dry macaroni and two cups of beef broth to the pot and stir to combine. Baked Linguine with Meat Sauce

This is a very rich, hearty meal. A favorite for special occasions! Baked Linguine with Meat Sauce 2 lb ground beef 2 garlic cloves 1 (28 oz) can crushed tomatoes 1 (8 oz) can tomato sauce 1 (6 oz) can tomato paste 2 t. sugar 1 t. salt 16 oz linguine noodles 1 (16 oz) pkg sour cream 1 (8 oz) pkg cream cheese, softened 3 green onions, chopped 2 c. shredded cheddar Preheat the oven to 350. Brown hamburger with minced garlic. Cook linguine according to package directions. In a tall pot, stir in ground beef, tomatoes, tomato sauce, tomato paste, sugar, and salt. Simmer 30 minutes. Place cooked pasta in a lightly greased 9 x 13 dish. Stir together sour cream, cream cheese, and chopped green onions. Spread carefully over the pasta. Top with meat sauce. Bake for 20-25 minutes, until thoroughly heated. Sprinkle with cheddar and bake until cheese melts.

Aunt Carla's Lasagna

Aunt Carla Hagstrom’s Lasagna (lightly adapted) 1 ½ jars spaghetti sauce 1 lb. hamburger (browned) 1 large container cottage cheese 2 cups shredded mozzarella 1 pkg. lasagna noodles Chopped onions and peppers to taste *can add ricotta or leftover cheeses Parmesan to top Preheat oven to 350. Boil the lasagna noodles. Brown hamburger with onion/peppers and simmer spaghetti sauce with it for 10 minutes. Blend the cottage cheese and 1 cup of mozzarella.   Begin by putting a bit of sauce in the bottom of the cake pan. Layer noodles, meat, cheese, and so on. (2 layers) Top final noodles with sauce and sprinkle with mozzarella and parmesan. Bake for 1 hour, take off cover, broil for 10-15 minutes.

Karen Hildebrandt's Pizza Hotdish

This is a crowd pleaser and one of our favorites! It's very easy to make ahead of time, and I use this one a lot for potlucks or meal trains. Karen’s Pizza Hotdish 1 lb. hamburger 1/4 medium onion (chopped) ½ pkg pepperoni 1 can mushrooms (optional) 1 box shell pasta 1   12 oz can tomato juice ½ c. sour cream ½ c. cottage cheese 3 oz. cream cheese Shredded mozzarella cheese **I’ve also added garlic/leftover cheese (like ricotta) Preheat oven to 350 degrees. Brown ground beef with onion. Cook macaroni and drain. Cream together cream cheese, sour cream, and cottage cheese. Combine all ingredients except mozzarella cheese. Put in casserole dish and top with mozzarella and pepperoni. Bake covered for 1 hour.
