Camp Granola

Camp Granola 1 ¼ c quick oats 1 ¼ c. old fashioned oats ½ c. brown sugar ½ c. coconut (optional) 1 T. cinnamon ½ t. salt 3/8 c. vegetable oil 1 ½ T. vanilla Preheat oven to 300. Mix all ingredients in the order given. It’s easiest to do this with your (clean) hands. Bake on a large jelly roll pan for 40 min- 1 hour (watch carefully, burnt granola is NOT good), stirring every 20 minutes. It’s needs to be a LIGHT golden brown and feel dry. Store in an airtight container when completely cooled.

Pizza Crust for When You Forget You Don’t Have Yeast in the House 1 1/3 c. all purpose flour 1 t. baking powder ½ t. kosher salt ½ c. milk 2 T olive oil 1/8 c. milled flax (optional). Heat oven to 400. In medium bowl, mix flour, baking powder, and salt. Stir in milk and oil until soft dough forms. If dough is dry, stir in 1-2 T additional liquid. On lightly floured surface, knead. Shape dough into ball. Cover with bowl; let stand 10 minutes. Place dough on ungreased cookie sheet; flatten slightly. Roll out to 12-inch round pizza pan. Poke holes in the dough with a fork. Bake 8 minutes, put on toppings, and bake about 20 minutes more.

Deb’s Pizza/Flatbread Crust – Deb Moe (This is Hannah’s favorite) 1 T. yeast ½-1 T. honey 1 ½ c. water ¼ c. milk 2 T. melted butter ½ c. oil ¼ c. flax, milled ½ c. whole wheat 1 t. salt 1 egg 3-4 c. flour Dissolve yeast in warm water & honey; let sit 5-10 minutes. Add egg, oil, butter, and milk. Whisk in flax, flours, and salt. Knead and put in a covered oiled boil. Let rise ½ hour. Drizzle olive oil on the bottom of the pan, sprinkle lightly with garlic salt and Italian seasoning. Spread dough over oiled pan, poke with a fork for pizza crust. For the flatbread, just spread dough over oiled pan and it is ready to finish off as a flatbread. Bake at 400 for 10 min. and finish off with pizza ingredients, then bake another 5-10 minutes on lowest oven rack. Makes two large pizzas, or 3 flatbreads.

Simple Pizza Crust

Simple Pizza Crust 1 pkg yeast 2 c. flour ¼ tsp salt 1 tsp. sugar 2/3 c + 2 Tbsp water Olive Oil Combine 1 c. flour with other dry ingredients. Mix in lukewarm water. Add another cup of flour. Knead and form into a ball. Let rise 15 minutes. Press into a greased and seasoned pizza pan.

Asian Meatballs and Rice Noodles (MSPI Mama) 3 T chopped green onions 2 1/2 T fish sauce (divided) ¼ c. and 1 ½ t lime juice (divided) 6 garlic cloves, minced (divided) 1 bacon slice ½ lb ground sirloin ½ lb ground pork 1 lb rice noodles ½ c warm water 6 T sugar 1-2 t chili garlic sauce (sriracha, for ex.) 2-3 T of chopped fresh herbs (such as basil, cilantro, mint) Add to a food processor or blender the green onions, 1 T fish sauce, 1 ½ t lime juice, 2 minced garlic cloves, and 1 bacon slice. Process until smooth. In a large bowl, mix the blended mixture with ½ lb ground sirloin and ground pork until well combined. Shape mixture into 1-inch meatballs. Heat a large nonstick skillet over medium heat. Coat with a bit of oil. Add meatballs; cook 8 minutes, or until meatballs are nearly done, browning on all sides. One Pan Healthy Italian Sausage and Veggies (Chelsea’s Messy Apron) About 2 cups carrots (2 large or a lot of baby) 2 red potatoes 1 small-medium zucchini 1 red pepper 1 head broccoli 17 oz. smoked sausage (Turkey, Chicken, Beef works) ½ T. EACH: dried basil, oregano, parsley, garlic powder ½ t EACH: onion powder, dried thyme 1/8 t red pepper flakes 4 ½ T olive oil Rice or quinoa for serving Preheat the oven to 400. Freezer Make Ahead Italian Meatballs (Slow Cooker Gourmet)

Freezer Make Ahead Italian Meatballs (Slow Cooker Gourmet) ½ c. panko bread crumbs ½ c. milk 1 pound ground beef 1 pound ground pork sausage (Sage flavor) 1 egg 2 t. dried parsley 1 t. dried Italian seasoning ½ t. salt ¼ t. pepper Line large cookie sheet with foil, place a wire cooling rack on top, and set aside. Add milk to bread crumbs and let them soak for 5 minutes. Meanwhile, mix both meats along with seasonings and egg. Add soaked bread crumbs. Use hands to gently mix until well combined, but do not overwork. Using an ice cream scooper (to ensure uniform size), scoop meat into hands and gently roll into a ball shape. Place on cookie sheet. Broil in the oven for about 8 minutes until lightly browned and crispy, then carefully flip and broil for another 4 minutes. BBQ Meatballs

BBQ Meatballs 1 lb. ground beef 1/3 c. oatmeal 1 T. minced onion Salt and pepper ½ c. milk Sauce: 2 T sugar 2 T Worcestershire sauce 1 c. ketchup ½ c. water ¼ c. vinegar 1/3 c. onion Mix ground beef, oatmeal, 1 T. onion, salt, pepper, and milk. Roll into balls and cover them with flour. Cook them and remove grease. Mix sauce- sugar, Worcestershire, ketchup, water, vinegar, and onion. Pour over meatballs and simmer until sauce is thick and hot – about 10 minutes.

Hildebrandt Bierochs 3 lbs. hamburger Head of cabbage Onion Rhodes Rolls (frozen, 36 count)     Fry half of the onion with hamburger. Fry ½ of the onion w/cabbage and add a little water and oil. Cook cabbage until mushy, and drain. Roll out rolls w/ flour and put large spoonfuls of hamburger and cabbage in. Fold up and pinch edges. Bake @ 375 for 20-25 minutes and brush with butter.

Potato Casserole - Kay Hicks

Kay’s Potato Casserole 1 lb. hamburger Chopped onion/green pepper Cayenne pepper 4-5 larger potatoes 1 can cheddar soup 1 can tomato soup Mozzarella Preheat oven to 350. Brown hamburger with chopped onion, green pepper, and a decent sprinkle of cayenne pepper. Peel potatoes and cut into thin slices. Mix the cheddar soup, tomato soup, and a dash of cayenne pepper. Drain hamburger. Mix all ingredients together in a greased 13 x 9 glass pan. Bake for 1 hour, cover with mozzarella cheese.

Shepherd's Pie - Judy Harms

Shepherd’s Pie (Judy Harms) 2 lb. hamburger ½ c. chopped onion 1 can cream of celery soup ¾ c. milk Batch of mashed potatoes (8-9) I do less usually 4 oz. cream cheese ½ c. sour cream 2 T butter Garnish: cheddar, bacon, green onion Preheat oven to 350. Boil potatoes to mash them. Brown the hamburger and onion together. Add salt and pepper to taste. Use a 9 x 13 pan and spray it lightly. Mix the soup and milk into the hamburger. Spread this mixture flat in the bottom of the pan. Add the cream cheese, sour cream, butter, and salt to the mashed potatoes. Whip together until smooth and spread on top of the hamburger. Cover and bake for 50 minutes. Garnish with the cheese, bacon, and green onion and bake uncovered for 10 more minutes.

Kirsten Harms' Baked Enchiladas

Baked Enchiladas (Kirsten Harms) 8 flour tortillas 2 reg cans tomato sauce (reserve ¾ c.) 1 packet taco seasoning 1 lb. hamburger Chopped onion 1 can black beans, drained 1 c. corn (Frozen or canned) 2 c. cooked rice (1 c. raw in 2 c. water) Salt and Pepper to taste Top with- 1 c. shredded cheddar, ½ c. chopped black olives, lettuce, salsa, sour cream Preheat oven to 350. In a 9 x 13 sprayed pan, spread ¼ c. of the tomato sauce. Create a tortilla layer (cut in half, fourths, to fit better. Combine the sauce (minus reserved), hamburger, taco seasoning, onion, beans, corn, and rice. Put on top of the tortillas. Layer more tortillas on top of rice/meat mixture. Cover with ½ c. of the sauce. Bake at 350 for 45 minutes. Take out, top with 1 c. cheese and ½ c. chopped olives. Bake an additional 10-20 minutes. Serve with toppings.

Baked Linguine with Meat Sauce

This is a very rich, hearty meal. A favorite for special occasions! Baked Linguine with Meat Sauce 2 lb ground beef 2 garlic cloves 1 (28 oz) can crushed tomatoes 1 (8 oz) can tomato sauce 1 (6 oz) can tomato paste 2 t. sugar 1 t. salt 16 oz linguine noodles 1 (16 oz) pkg sour cream 1 (8 oz) pkg cream cheese, softened 3 green onions, chopped 2 c. shredded cheddar Preheat the oven to 350. Brown hamburger with minced garlic. Cook linguine according to package directions. In a tall pot, stir in ground beef, tomatoes, tomato sauce, tomato paste, sugar, and salt. Simmer 30 minutes. Place cooked pasta in a lightly greased 9 x 13 dish. Stir together sour cream, cream cheese, and chopped green onions. Spread carefully over the pasta. Top with meat sauce. Bake for 20-25 minutes, until thoroughly heated. Sprinkle with cheddar and bake until cheese melts.

Karen Hildebrandt's Tator Tot Hotdish

Karen’s Tator Tot Hotdish 1 lb. hamburger 1 can cheddar cheese soup 1 c. sour cream Frozen Tater tots (~1 bag) 1 can String beans Bit of chopped onion Preheat oven to 350. Brown hamburger with chopped onion. Blend soup and sour cream. Layer: hamburger, string beans, soup mixture, string beans and tater tots. Bake for one hour, covered. Uncover and broil for 10 minutes.

Aunt Carla's Lasagna

Aunt Carla Hagstrom’s Lasagna (lightly adapted) 1 ½ jars spaghetti sauce 1 lb. hamburger (browned) 1 large container cottage cheese 2 cups shredded mozzarella 1 pkg. lasagna noodles Chopped onions and peppers to taste *can add ricotta or leftover cheeses Parmesan to top Preheat oven to 350. Boil the lasagna noodles. Brown hamburger with onion/peppers and simmer spaghetti sauce with it for 10 minutes. Blend the cottage cheese and 1 cup of mozzarella.   Begin by putting a bit of sauce in the bottom of the cake pan. Layer noodles, meat, cheese, and so on. (2 layers) Top final noodles with sauce and sprinkle with mozzarella and parmesan. Bake for 1 hour, take off cover, broil for 10-15 minutes.

Karen Hildebrandt's Pizza Hotdish

This is a crowd pleaser and one of our favorites! It's very easy to make ahead of time, and I use this one a lot for potlucks or meal trains. Karen’s Pizza Hotdish 1 lb. hamburger 1/4 medium onion (chopped) ½ pkg pepperoni 1 can mushrooms (optional) 1 box shell pasta 1   12 oz can tomato juice ½ c. sour cream ½ c. cottage cheese 3 oz. cream cheese Shredded mozzarella cheese **I’ve also added garlic/leftover cheese (like ricotta) Preheat oven to 350 degrees. Brown ground beef with onion. Cook macaroni and drain. Cream together cream cheese, sour cream, and cottage cheese. Combine all ingredients except mozzarella cheese. Put in casserole dish and top with mozzarella and pepperoni. Bake covered for 1 hour.

Basic Meatloaf

Here's just your basic, delicious, simple meatloaf! I rarely actually measure when I make this. Very versatile. Meatloaf 1 lb. hamburger 1 egg Bit of onion 1 Tbsp mustard ½ c. ketchup Dash of Worcestershire ½ tsp. seasoned salt, salt, and pepper ¼- ½ c. rice (Cooked. Uncooked for Minute Rice)      *Can substitute oatmeal Mix all ingredients together.   Press into meatloaf pan. Top with ketchup to taste. Bake at 350 for 40 minutes. Or, if you're roasting vegetables or crash hot potatoes with this, bake at 450 for 20ish minutes.
